idk what kind of swap you are thinking but I just finished a swapping in a new m20 and G260 and am willing to help. what is you time frame? are you thinking 12v or 24v?

I was thinking about going v8 on it actually, maybe the m60b40. Has anyone done this and if so how much trouble was it? Were you able to retain power steering/brakes and a/c?

Here is the information you seek. I know locally most of the swapped e30's are M/S5x's.

Yes, most people who swap motors go with an m/s5x's. If you were to do a m60 I know you have to do quite a bit of fabrication. But if you don't mind going through fabrication why not just go with an ls1. They already have more hp and a lot more torque stock compared to a m60. Also, there is greater variety of mods available for those engines.
